The grapes are harvested when they have reached an optimal maturity level which permits to produce a blend that is powerful and rich and where we can find notes of black fruits (blueberry, black berry), an easy touch of spices (liquorice), violets, chocolate and coffee (emphyreumatiques).
This wine is young in mouth, fresh, and you can reveal the taste of pepper and licorice.
Since 1999, Le Domaine de Périllière propose two blends, the appellation Côtes du Rhône Villages, and Costières de Nîmes. The winemaker, Frédéric Vincent, works his soil according to the method Terra Vitis. He is a winemaker who works his parcels with the ambition to highlight the different soils that exists on his land.
Set in the heart of the Southern Rhone, near Avignon, this unique co-op consisting of ten winemakers with individual identities and styles of working. The vignerons all practice sustainable agriculture, which means low yields and small batch vinification.
The grapes, filtrations and blending are all natural and artificial wine technology is rejected. Vinification is without sulphites and at low temperature in order to bring out the best of the fruit and full potential of the land. Non Filtered and Low Preservatives.
